Ingredients:
- 500 grams boneless chicken, cut into small pieces
- 1 cup fresh coriander leaves
- 1 cup fresh mint leaves
- 1 green chili, chopped
- 2 garlic cloves, chopped
- 1 inch piece of ginger, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala powder
- 1/2 cup plain yogurt
- Salt to taste
- 1 tbsp oil
- Lemon wedges for garnish
Instructions:
- In a blender, combine the coriander leaves, mint leaves, green chili, garlic, ginger, cumin powder, coriander powder, turmeric powder, garam masala powder, yogurt, and salt. Blend until you have a smooth green paste.
- Transfer the green paste to a mixing bowl.
- Add the chicken pieces to the green paste and mix well to coat them evenly.
- Cover the bowl with a cling wrap or foil and refrigerate for at least 2 hours or overnight to allow the chicken to marinate and absorb the flavors.
- Preheat the oven to 180°C (350°F).
- Grease a baking tray with oil and place the marinated chicken pieces on it.
- Bake the chicken for 25-30 minutes or until cooked through, turning the pieces over once halfway through the cooking time.
- Garnish with lemon wedges and serve hot with rice, naan bread or salad.
